• Boil uncovered for about 10 minutes until tender and then drain. This takes away the most of the bitterness.
• Combine 1 cup water and 1 cup sugar in a saucepan over medium heat until the sugar is dissolved.
• Add the peels and simmer for 30 minutes. Drain and toss with sugar to coat after they have cooled slightly.
Wait for them to cool completely before sampling one! Don’t feel too guilty about the sugar this one time, because citrus zest is a fantastic source of cancer-fighting phytochemical antioxidants.
