How To:

 Simply slice the peels of 5 freshly scrubbed oranges into ¼ inch strips and place in a saucepan with just enough water so that they are completely covered.

 Boil uncovered for about 10 minutes until tender and then drain. This takes away the most of the bitterness.

 Combine 1 cup water and 1 cup sugar in a saucepan over medium heat until the sugar is dissolved.

 Add the peels and simmer for 30 minutes. Drain and toss with sugar to coat after they have cooled slightly.

Wait for them to cool completely before sampling one! Don’t feel too guilty about the sugar this one time, because citrus zest is a fantastic source of cancer-fighting phytochemical antioxidants.

Citrus fruits are also delicious when used in savoury food dishes. Lemons are usually squeezed into guacamole and citrus-based marinades add incredible flavour to meat and also tenderize the meat. Ever make a dish and find it’s too salty? Simply add some lemon juice as this cuts down the saltiness and no one will ever know!
